Easy Asian Slaw

This quick and easy coleslaw is a summer favourite in our house.

Ingredients:
– shredded cabbage (red or white), about half a medium cabbage
– 2 grated carrots 
– 2 grated apples
(I chop and grate with my Breville Wizz attachments for efficiency)
– mix together 
Dressing: 
– juice of two limes
– 2 tablespoons of gluten free soy sauce
– 2 tablespoons fish sauce 
– splash of chilli flakes 
– tsp brown sugar
– generous glug of extra virgin olive oil. 
– mix and pour over slaw. 

Top with fresh mint (and/or coriander), mango and toasted peanuts (or pine nuts).
