Special Chicken Sandwiches

This recipe is easy and delicious.

If you are using leftover roast chicken and don’t have a whole one, just add the ingredients in smaller amounts and adjust to taste.

This still tastes delicious with regular mayonnaise, but to avoid the inflammatory fats and preservatives in regular mayonnaise I recommend the Gevity Bone Broth Mayo or a home made egg based mayonnaise.

Ingredients

Roast Chicken (preferably DIY, or find one with as few additives and preservatives as possible)

3-5 stalks organic celery, sliced and cubed

1 cup walnuts chopped

1/3-1/2 cup Gevity Great Guts Bone Broth Mayo (or a homemade mayonnaise, made with fresh eggs, olive oil etc)

1-2 tablespoons Dijon mustard

salt and pepper to taste

Method

  1. Shred the meat off the chicken, cube it and add to a large bowl.
  2. Add the celery, walnuts, mayo, dijon and salt and pepper.
  3. Mix well, taste to check flavours, adjust mayo/dijon ratio if required or add more celery and walnuts if you wish.
  4. Serve on a quality gluten free bread (I prefer Buckwheat) or a good sourdough.
